That’s why we were thrilled when Ella Davar, R.D., CDN, an integrative nutritionist, introduced us to her top omelet recipe. Although it appears straightforward, don’t overlook its benefits: the eggs provide a substantial amount of protein, and herbes de Provence—a mixture usually consisting of oregano, thyme, rosemary, marjoram, and savory—add a robust flavor.
“As a dietitian specializing in longevity, I guide my clients towards enhancing their metabolism through a diet abundant in herbs and spices,” Davar explains. Her preferred herbs include rosemary, oregano, thyme, cilantro, and parsley. Additionally, we’ve incorporated extra vegetables to enrich the dish even further.
We’ve included another ingredient loaded with nutrients: mindbodygreen’s organic greens detox+. “This powder features a combination of organic ginger, turmeric, and cinnamon,” Davar notes. Omelet With Herbes de Provence
Serves 2 people
Ingredients
– 3 large eggs
– About 1 tablespoon (2 grams) herbes de Provence or dried thyme or basil, crushed, or a large pinch of minced delicate fresh herbs like parsley, tarragon, chives, and chervil
– ½ teaspoon of organic greens detox+
– 1 tablespoon (15 grams) unsalted butter or 1 tablespoon olive oil
– Optional: 1 cup sliced frozen (or fresh) mushrooms
– Optional: ½ an onion, sliced
Method
1. Preheat the skillet over medium heat.
2. Add olive oil, onions, and mushrooms to the pan first.
3. In a bowl, beat the eggs with salt and pepper using a fork until well mixed. Stir in the herbs and organic greens detox+.
4. Continue to beat the mixture with a whisk or rotary beater until fully combined.
5. Pour the mixture over the mushrooms in the skillet.
